Chicken and shrimp in a seasoned Italian sauce.  

Cooked in one skillet* this is an excellent family meal or entree for a romantic dinner by candlelight!  

Excellent with a salad on the side and garlic bread.

*Electric Skillet users: Set the temp to 350 and follow recipe as is. :)

 

Chicken Cioppino

 

2 1/2 - 3 lbs cut-up chicken

1/2 tsp salt and a pinch of pepper

1 recipe Italian Sauce

1 lb clean, raw, shrimp

 

Season chicken with salt and pepper

Brown slowly over medium heat, turning once or twice for about 20 min.

While the chicken is cooking, prepare the Italian Sauce.

 

Italian Sauce

Mix two 8 oz. cans of Italian seasoned tomato sauce

1/2 cup cooking claret or red wine

3/4 cup chopped onion

1 clove garlic, minced

3 T snipped parsley

1 t crushed basil

1 bay leaf, crushed

 

Add the Italian sauce to the chicken after the first twenty minutes of cooking.

Cover and simmer until the chicken is tender, about 35 minutes.

Add shrimp, being sure to immerse them in the sauce. 

Cover and continue to cook until the shrimp are done, about 5-10 minutes.

Remove from heat and serve!
